Spicy Boiled Pork Wontons

My love for spicy Asian flavors is deeply ingrained in my lifestyle aftering growing up and eating these kinds of dishes anywhere from San Francisco to Lima, Peru. I always gravitate towards recipes that celebrate them and this dish is no exception. These are super fun to create and make for a great activity to do with the whole family, especially when you can put the kids to work.

Our Kissed by Binchotan Japanese Chile Blend will add the heat to this entree, so use according to your spice level comfort.

Ingredients

Dipping sauce

  • 4 tbsp light soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 4 tbsp chili oil
  • 1 each small garlic clove, grated

Directions

  1. In a mixing bowl combine Pork meat, Kissed by Binchotan blend, scallions, cilantro leaves, ginger, chicken broth and salt.
  2. With a chopstick or a fork start mixing it in a circular motion, after a minute add cornstarch and keep mixing it for another 2 minutes until well combined, the mixture should feel smooth and sticky.
  3. Beat the egg with a splash of water and set aside.
  4. In one hand hold a wonton wrapper, with the help of a spoon place a dollop of the mixture in the middle of the wrapper, brush the edge of the wrapper with the egg mixture and fold over making sure there are no air pockets inside the wonton and the edge is sealed. You can take it an extra step and pinch the two corners together if desired or fold anyway you like. Repeat until you have the desired amount of wontons.
  5. Bring a pot of water to boil, over medium to high heat (it should be big enough to have enough room for your wontons to boil without being overcrowded, or just do it in separate batches)
  6. While you are waiting for the water to boil, mix everything together for the dipping sauce.
  7. Place the wontons in the boiling water and wait for them to come up afloat, let them cook for 1 more minute, about 3-4 minutes total depending on size. With a slotted spoon or a spider remove it from the water, place them in a serving dish, garnish them with sliced scallion and toasted sesame seeds. Enjoy it!!

Recipe Note

- Buy wonton wrappers at the store to make your life easy or make the dough yourself. Mix 2 cups of AP flour with .5 cups of warm water in a bowl. Roll out into small circles or as desired.

- There are endless techniques to fold you wontons or dumplings. Start simple and experiment from there.

- Mixing the stock with the ground pork helps keep it moist as it cooks.

- Cooking time depends on the size but bit sized dumplings usually take about 3 minutes to cook. Once they float to surface, let them cook an additional minute or so.
